"Tachisoba",the specialty of Hinoemata, Fukushima, the entrance to Oze

The local specially of Hinoemata-mura Village, "Tachisoba" is one of the yamoudo (mountaineers) cuisines. It earned its name from the unique cookery - rolling out the dough made 100% of buckwheat without connecting agents into 2mm thinness, place several sheets on top of each other, place the hand like a guide ruler and cut as if to cut cloth. Hinoemata-mura Village was originally poor area and villagers could not afford connecting agents. Thus, the dough was made 100% with buckwheat flour and breakable when folded. That was how this unique cookery was developed. Soba-kneading has been considered as female work in Hinoemata-mura Village, and it was often said that "women who cannot make good soba cannot find husbands". Enjoy the special soba that you can find only in villages with great water.
